Indian beef kebabs






Ingredients
  • 1/4 cup curry powder
  • grated rind and juice of a lemon
  • 400g lean beef, cut into 2cm pieces
  • 5 cups chopped mixed vegetables
  • 2 cups cooked rice
  • 1/3 cup low-fat yoghurt
1. Combine curry, lemon juice and rind. Add beef and chill for 20 min. Thread onto 8 skewers with vegies.

2. BBQ or grill over medium heat for 6-8 min. Serve with rice, yoghurt and mint.

Sugar-glazed pork






Ingredients
  • 1 tablespoon each golden syrup and brown sugar
  • 1/4 cup apple cider vinegar
  • 4 small lean pork chops/medallions
  • 2 red apples, cut into wedges
  • 500g sweet potato, cooked and mashed
  • 200g snow peas, steamed
1. Combine the first three ingredients. Pour over pork, stand for 10 min.
2. Barbecue over a medium-high heat for 4-5 min. Add apple to the grill and cook for 1-2 min. Serve with mash and snow peas.

Grilled lamb couscous






Ingredients
  • 3/4 cup reduced-fat plain yoghurt
  • 1/3 cup chopped fresh mint or coriander
  • 400g lean lamb leg steaks
  • 1 tablespoon Moroccan spice
  • 3 zucchini, sliced
  • 3 slender eggplants, sliced
  • 250g punnet cherry tomatoes, halved
  • 2 cups prepared couscous
1. Combine yoghurt and herbs and chill until required. Season the lamb steaks with spice. Preheat a char-grill and cook the lamb for 2-3 min or until cooked as preferred, cover with foil and rest for a few min.

2. Add zucchini and eggplant to char-grill and cook 1-2 min each side or until tender. Add tomatoes, cook 30 sec.

3. Combine the couscous and vegetables. Divide between serving plates and top each with the lamb and yoghurt. Garnish with fresh coriander sprigs.






Tips
  • You can use cucumber yoghurt as an alternative to herb yoghurt.
  • Use lamb chops, removing all visible fat before cooking.
  • Add sweet potato and beans instead of the lamb for a vegetarian alternative.
